Oatmeal chocolate cookies

I have been trying to go as gluten-free as possible.

My GF lent was a success, although it was a lot harder than I thought.

I had not imagened how much a person can crave just a teeny bity of bread.

Or how many foods actually have gluten, even if it doesn't seem so.

But after Passover I have been eating gluten again and I can notice my fybromyalgia acting out.

So, I have been trying to find GF treats for myself.

And I was so happy when I found out, little research never did anything bad to anyone, that there actually is GF oatmeal.

What was the next step?

Oatmeal cookies of course, and since chocolate is GF also, well, that would be the perfect solution, wouldn't it.

Here is my recipe for Oatmeal chocolate cookies.

We had a lot fun doing them with my son and even more fun eating them.

5 dl oatmeal

200 gr margarine

100 gr dark chocolate

0,5 dl sugar

1tea spoon vainilla

2 eggs

1. Melt the chocolate together with margarine. I used microwave because it is the easiest way. Then mix them well and let them cool off.

2. Mix oatmeal with the egg, sugar and vainilla. Just use a big spoon and get them all mixed even.

3. Mix the cooled off chocolate-margarine with the rest of the ingredients. It's important that it really has cooled off or you'll cook the eggs.

4. Make little balls of the mix and bake them in 200C. My oven leaks so you might not need that high temperature. The time depends on the size of the cookies you make but 10-15 min should be enough.

Enjoy!

  4. Very nice activity to do with the kiddies.

I went wheat free, gluten free, and sugar free for two months, and the results were amazing. It is a restrictive lifestyle for sure, but there are so many different possibilities to explore. Takes a bit of time to get used to, but it's a lovely health change. The only thing I was not able to find a substitute for in this journey was brown sugar and molasses (for the sugar free part of the diet), but for the most part, all I had to do was cook and bake everything.

    1. I really liked being GF too, Yona. After I got over the craze for anything with gluten. It's weird how strong that is. But it's true there is a lot of really good food you can do, it just takes a bit more effort and time.

  7. My daughter is allergic to wheat and I'm still nursing which means I gluten free. It's hard not to cheat and very challenging because she's also allergic to nuts, dairy and eggs. I cheat sometimes but I fell so guilty afterwards :(
